Soup's On!

It's Foodie Friday at Applejack Lane. With a little nip of fall weather in the air, everyone here is in the mood for some tasty and hearty soups. Over the weekend, I made one of my favorites - Tuscan Soup. It is great with some nice crusty bread. I hope you try it again and again!

Tuscan Soup
1 pound spicy Italian sausage
3/4 cup diced onion
2 slices of bacon
1 1/4 teaspoon garlic powder
3 Tablespoons chicken bouillon with 6 cups of water
or
6 cups chicken broth
2 large potatoes, diced.
1 package frozen spinach
1 cup whipping cream

Remove casings from sausage and brown in a dutch oven until crumbly. Remove from heat and drain fat. Rinse if needed.
Saute onion with bacon slices and garlic in dutch oven.
Add bouillon and water or chicken broth.
Add sausage.
Add diced potatoes and simmer for about 15 minutes until potatoes are tender.
Microwave spinach according to package directions. Remove excess water. Add spinach to soup.
Lastly, add the whipping cream until heated but not boiling.

I love anything with spinach and husband likes anything with sausage--this might be perfect for us!

This will be the PERFECT soup for Dr. Gollum's tureen. The cream and sausage with chicken broth....oh, I can't wait to make this.
